I love sharing my recipes. No person will
create a dish that tastes exactly the same as
another, even if the instructions have been
identical. This is why I think cooking is an art.

Τα Χανιά είναι το σπίτι μου. Αυτό που
κάνω κυρίως στην Κρήτη είναι να τρώω.
Αναζητώ φαγητό, έμπνευση και ιστορίες.
Φτιάχνετε μπουγάτσα στο Morito κι
έχει τρομερή ζήτηση.
Χρειάστηκαν μήνες πειραματισμού για
να πλησιάσω σε αυτό που έτρωγα στον
Ιορδάνη. Ο κόσμος τη λατρεύει.
Μια αγαπημένη συνταγή;
Χοχλιοί ή χέλι σαβόρο.
Θα μοιραζόσασταν τις συνταγές σας;
Ναι. Κανείς δεν μπορεί να δημιουργήσει
ένα πιάτο πανομοιότυπο με έναν άλλον,
ακόμα και με ολόιδια συνταγή. Γι’ αυτό
θεωρώ τέχνη τη μαγειρική.
